This avocado strawberry milk is Rainbow Nourishment’s take on the viral strawberry matcha and a popular Lebanese smoothie!

The creamy avocado mixture perfectly complements the sweet and tangy strawberry puree and the colours are just so pretty. PurpleSkin® Avocados are perfect for this recipe as they’re extra creamy, and are perfect for pureeing or mashing!

Ingredients

Avocado Milk

  • 1 cup dairy-free milk
  • ½ PurpleSkin® avocado
  • 2-3 tbsp dairy-free sweetened condensed milk, or to taste

Strawberry Mixture

  • 1 cup strawberries, fresh or frozen and chopped
  • 1 tbsp maple syrup, or to taste

To Serve

  • 1 cup dairy-free milk
  • Ice

Method

  1. Make the avocado milk: Add the PurpleSkin® Avocado, milk and condensed milk to a blender or food processor. Blend until well combined and smooth. Set aside.
  2. Prepare the strawberry mixture: In two tall glasses, add the strawberries. Use a muddler to mash the strawberries well. Alternatively, you can mash the strawberries in a bowl with a fork, or puree them with a blender/food processor, then add them to the glasses.
  3. Assemble: Fill ½ to ¾ of the glasses with ice. Slowly pour the milk on top. Top with the avocado mixture.
