These avocado wonton cups by Rainbow Nourishments are a great appetiser or snack, when you want minimal effort, but lots of flavour and texture.

The crispy wonton wrappers combined with the creamy avocado is so satisfying! GreenSkin® GMax® Avocados are perfect because as they don’t brown once cut (great for those gatherings). And they have a smaller seed than other avocados so it’s a win-win!

If you don’t want to make cups, cut the wonton wrappers into strips and bake them flat on a baking tray. Then, use all the ingredients to make a tasty salad or salsa dip.

Serves 4-6

Prep Time: 20 mins

Ingredients

  • 16 wonton wrappers
  • Oil, as needed
  • 1 GreenSkin® GMax® Avocado, cubed
  • ¾ cup red capsicum, cubed
  • ½ cup packed purple cabbage, chopped and thinly sliced
  • ½ cup cooked chickpeas

Sauce

  • 1 tablespoon crispy chilli oil (or use ½ tablespoon sesame oil, 1 teaspoon red chilli flakes and 1 teaspoon minced garlic)
  • 2 teaspoons soy sauce
  • 2 teaspoons rice vinegar, or any vinegar

Method

  1. Preheat your oven to 180°C (350°F).
  2. Lightly grease 16 muffin cups (you’ll need 2 muffin pans) or mini tart pans. Gently press a wonton wrapper into each muffin cup, moulding it against the bottom and sides. Lightly brush the surface of the wrappers with oil. Bake for 12-14 minutes or until the wrappers are lightly golden brown. Allow to cool in the muffin tin.
  3. In a small bowl, mix together the sauce ingredients. Taste test and adjust if desired.
  4. Add the avocado, capsicum, cabbage, chickpeas and sauce to a bowl. Toss together.
  5. Spoon the filling into the wonton cups and serve within a few hours.

Note: the wonton wrappers can be made 2 days in advance, and kept in an airtight container until you need them.
