Searching for a crowd-pleasing canapé? Look no further than these special yet super simple finger sandwiches.

  • 2 GreenSkin® Avocados, halved, pitted, finely sliced
  • 8 slices smoked salmon or trout
  • 250g goats cheese, softened
  • Dill sprigs or micro herbs
  • Salt & pepper
  • 1 tsp lemon juice
  • 8 slices white bread, thickly sliced
  • 1 small jar of caviar (optional)


  1. Place the goats cheese and lemon in a bowl and mix until soft and smooth.
  2. Spread two thirds of the mixture onto 4 slices of bread – these will be the sandwich ‘bottoms’. Evenly place the smoked salmon or trout slices across the bread slices. Season lightly.
  3. Spread another very thin layer of the mixture on the remaining 4 slices of bread – these will be the sandwich ‘tops’.
  4. Arrange avocado on the tops of the bread, then assemble to make the sandwiches.
  5. Carefully trim the edges with a sharp bread knife and cut into thirds for finger sandwiches, and then in half again if wanting canape style.

To Garnish

Place the caviar on top of the sandwiches and sprinkle with fresh dill or micro herbs and a touch of pepper. Serves 12.
