With only 4-5 key ingredients, these simple and fun-to-make sushi stacks by Rainbow Nourishments will make lunch or dinner one to look forward to! Unlike regular sushi, there’s no need for rolling or special equipment.

GreenSkin® Avocados are the hero with their firm, buttery flesh which makes them perfect for slicing and dicing. The flesh doesn’t go brown after you cut them, which makes this recipe perfect for meal prep ahead of time!

Prep Time: 15 mins


  • 2/3 cup uncooked sushi or regular rice (or 2 cups of cooked rice)
  • 2 teaspoons sushi seasoning (optional)
  • 3-4 GreenSkin® Avocados, sliced or diced
  • 200g pre-seasoned firm tofu, diced*
  • 1 cucumber, diced

* Sweet chilli tofu was used in this recipe. Most supermarkets and Asian stores have pre-seasoned tofu too.


  1. Prepare the rice according to packet instructions. Mix in the sushi seasoning.
  2. Cut all of the ingredients, as needed.
  3. Grease a 1-cup measure, ramekin dish or any circular container. Stack the ingredients in reverse order of how you would like them to appear. Invert the cup onto a plate and garnish as desired. Alternatively, serve all ingredients in a bowl.

Serve with soy sauce, wasabi, seaweed pieces, sriracha, or vegan mayo, as desired.
