Avocado on toast has never looked this good!

If you’re looking to elevate your toast, your go-to must be the deliciously creamy PurpleSkin® Avocados! Whipped to perfection and ready for you to enjoy any time of the day!

Makes: 2-3 slices

Prep time: 5 mins

Ingredients

  • 2-3 slices of bread
  • 1 ripe PurpleSkin avocado
  • ½ cup yoghurt
  • Lemon juice, salt and pepper to taste

To serve:

  • ½ cup tightly packed red cabbage, finely sliced
  • Chilli flakes, to decorate (optional)

Method

  1. Remove the pit from your avocado. Scoop out the flesh and place it in a food processor, or a bowl if you have a stick blender. Add the yoghurt and lemon juice. Puree the avocado until it’s fluffy and smooth. Add lemon juice, salt and pepper to taste.
  2. Toast your bread until golden.
  3. Top your toast with red cabbage. Use a piping bag with a round nozzle to pipe the whipped avocado on top. If desired, sprinkle some chilli flakes on top.
