Avocado on toast has never looked this good!

Ingredients
- 2-3 slices of bread
- 1 ripe PurpleSkin avocado
- ½ cup yoghurt
- Lemon juice, salt and pepper to taste
To serve:
- ½ cup tightly packed red cabbage, finely sliced
- Chilli flakes, to decorate (optional)
Method
- Remove the pit from your avocado. Scoop out the flesh and place it in a food processor, or a bowl if you have a stick blender. Add the yoghurt and lemon juice. Puree the avocado until it’s fluffy and smooth. Add lemon juice, salt and pepper to taste.
- Toast your bread until golden.
- Top your toast with red cabbage. Use a piping bag with a round nozzle to pipe the whipped avocado on top. If desired, sprinkle some chilli flakes on top.
