This tasty nourish bowl recipe by Rainbow Nourishments is loaded with goodness thanks to a gorgeous GreenSkin® GMax® Avocado, miso and tahini dressing. The perfect meal prep recipe that you can make ahead of time as these avos won’t go brown.

Ingredients
- Miso pumpkin
- 400g pumpkin, thinly sliced
- 1 tsp miso paste
- 1 tsp maple syrup
- Sesame oil, as needed
Marinated tempeh
- 300g tempeh, sliced
- 1 tbsp soy sauce
- ½ tbsp maple syrup
- 1 tsp garlic powder
- 1 tsp dried chilli flakes (optional)
Dressing
- ¼ cup spinach leaves
- ¼ cup GreenSkin® GMax® Avocado
- 2 tbsp tahini
- 2 tbsp sesame oil (or water)
- 1 tbsp miso paste
Extras
- 1 GreenSkin® GMax® Avocado, thinly sliced
- 1 cup brown rice, cooked
- ½ cup red cabbage, shredded
- ½ cup edamame beans
- ½ cup sprouts
Method
- Preheat oven to 180°C.
- Arrange pumpkin on a baking tray. Mix the miso, maple syrup and sesame in a small bowl. Toss the pumpkin in the marinade and set aside.
- Arrange the tempeh on a baking tray. Mix the soy sauce, maple syrup, garlic and chilli in a small bowl. Toss the tempeh in the marinade and set aside.
- Bake the pumpkin and tempeh in the oven for 30 minutes or until both are tender.
- To make the dressing, add all ingredients to a blender and blend until smooth. Add more oil or water for a thinner dressing.
- Arrange the baked pumpkin, tempeh and extras in 2 bowls. Serve with the dressing.
