2 PurpleSkin® or GreenSkin® Avocados
1 packet pasta spirals or shells
2 cup fresh spinach
1 cup fresh basil chopped
2 garlic cloves minced
⅓ cup olive oil
2 tbsp lemon juice
1 tbsp of your favourite spices (we used smoked paprika, chilli and all spice)
- Cook shells according to the package.
- Meanwhile, add all other ingredients to a food processor, blend well.
- Drain pasta leaving a small amount of the water and stir in blended ingredients.
- Dress with parmesan if you like, add a touch of pepper and you’re all set for a deliciously simple dinner.
